Theyāre closing after exactly 15 years, which almost certainly means their lease is up for renewal. Likely the landlord wants to raise the rent. Might just not be as profitable as their many other ventures.

peach aguachile - dont remember seeing this on the menu before, emblematic of the bold flavour plus elegance of so many dishes on the menu, particulalrly the nonmeat ones
left feeling very sad animal will no longer existā¦

related to the aguachile, one of the few animal/j&v recipes ive come across:
Starting to put it together in my mind. I donāt see any actual cilantro, mint or chiles so Iām thinking they made oils? And I assume lime but looks like extra peach juice too.
there were three liquid components: a vivid green oil, which i assume was cilantro and/or mint, the aguachile which had peach juice, and (presumably) olive oil
Little red dots too that could be chile de arbol oil?
