Believe this comes from VORP, a baseball stat (now in other sports too) that measures how much better a player is than an average available low-cost player.

Replacement-level is basically the low end of average, what you’d expect from a random non-specialist.

I was able to check out the DTLA Prince St over the weekend. Man that square slice is good - just like I remember the NY version.

But Prime is still my daily driver. Look at this textural perfection.

Got a couple thick cheese slices from Apollonia’s last night. Heavy hitters - had to save one for reheating today. The crust’s crispy thickness can be a little taxing on the corner slice but pays off better on a middle slice. Comparable to Quarter Sheets in many ways except that the sauce on top is absolutely killer and beats anything I’ve had recently. There’s a lot of it without sacrificing balance.

That’s slightly misleading. He built the trailer-oven in 2016 and moved to LA the next year.

Good call. Can’t prove this, but have found Apollonia’s thicker/crispier/more shattering over the last few years, not always a positive. But prefer their sauce/toppings to Quarter Sheets, which I find underdressed.

Yeah, chewing the corner began to feel like work after a while. Depth of flavor on the cheese and sauce mostly makes up for it, though. Speaking of underdressed, we had De La Nonna a few weeks ago and one of the end pieces had straight up nothing on it. No sauce, no cheese. I guess there was oil and salt but that was it. Nothing that dramatic at Quarter Sheets, luckily!

I got stuck behind a group of women that took an hour to order. One of my biggest pet peeves is slow orderers, esp when the choices are literally staring you in the face from the pizza case.

But I have to say that prime made me a believer in cheese pizzas. I never really understood cheese pizzas generally except for neopolitan margherita style pizzas. I always went with toppings on my pie because my thought was always more is more, but now after eating a lot of prime pizza one of my favs is just the plain cheese.
