admirable! love a good castella but never tried making it. some store bought ones have too much of a syrupy artificial, egg white taste I dislike. I’m hoping to find a good brand that I can reliably get here. in travels I’ve really liked ones from Nagoya and Nagasaki.
I did get one last week with setouchi lemon and it was very nice with morning coffee as well.
indeed, a great combo. but god-tier combo for me is coffee with these aged sweet potato cakes from Oita. saffy’s cardamom roll is a distant 3rd for me in terms of coffee go tos.
I also use Be Bright’s Sojourner on a regular basis.

Yes I find the packaged ones generally too sweet too if you find a good one you can get in the states please do tell
