There have been plenty of write-up of Hayato’s orizume so I’m not gonna elaborate much further. However, I do think the orizume gets you close to what you’ll experience at the restaurant overall. I know the orizume isn’t cheap but it’s worth every penny if you’re into simple food that’s executed with laser precision and complementing flavor accents that markedly accentuate the inherent quality of each ingredient.
It’s a lot of food and it took the two of us about 2 hours to finish everything.
We normally don’t drink but we grabbed this bottle at the restaurant.
I’m going to pick up a bento box today and definitely not posting any pictures after seeing this. Amazing photos.

What a meal(s) - we had 2 1/2 meals from the box.
Really hard to isolate favorites, but I will list the few that come off the top of my head
—Duck “forcemeat” wrapped in shiso
–“Candied” uni
— Anago (steamed to a fluffy bite of perfection)
— that nori sauce on the abalone
— grilled Maui onion
Reading the accompanying literature was fascinating but a little hard to cross-reference from the printed page to the items in the boxes. Could have used a legend of some sort.

My pictures are only okay. It’s really difficult to take close up shots of food on a pair of chopstick at night with such weak lighting in my house. I have to hold my camera and take pictures with my left hand while trying to steady my right hand that’s holding on to the chopsticks. That’s why many of my shots aren’t really in focus. It would help if I install some brighter lights…

I believe the nori sauce accompanied the grilled scallop. But both were part of my highlights alongside the kuromame which I thought was sensational! How did you like the kuromame?

The abalone was “dressed” in a sauce/jelly of its cooking sauce which was delightful as well.

The Turnip “Fukume-Ni” was wonderfully tasty and juicy.
I could go on… Iwashi was beyond.
