In retrospect I agree, but at the time, as a nerdy science inclined teenager, that kind of molecular gastronomy was mind bending
The “knot foie” was memorable but overall it put me off molecular gastronomy since the dishes that went the farthest in that direction mostly didn’t taste good.

On the list, but there are so many pizza places that I really don’t go out of the way for it, especially since Mamas Too and L’Industrie are in the West Village. I did try his donut place when that was a thing, and it was great.

Went to Hayato again. Nothing I can add to the discourse beyond it was better than last time, and it was sublime. Pretty sure I was sat next to a few FTCers!
