The “knot foie” was memorable but overall it put me off molecular gastronomy since the dishes that went the farthest in that direction mostly didn’t taste good.

Hahaha, as a young teenager, it was more about the whiz bang of it all, and the intellectual freedom, then the flavor. In retrospect, kind of agree with you, but it really opened my eyes to what food can be

On the list, but there are so many pizza places that I really don’t go out of the way for it, especially since Mamas Too and L’Industrie are in the West Village. I did try his donut place when that was a thing, and it was great.

Just adding to the archive: from a couple weekends ago when ingredients were transitioning to spring. Likely fully into spring now, if not soon.

Tempura - Shirauo, sweet potato

Sashimi - Aori ika, sayori

Wild abalone :heart_eyes:

Panko bamboo - start of spring :partying_face:

Duck - one of my favorites :drooling_face:

Ebi shinjo cake / mizore nabe

Rice - Buri (belly?) - Amazing! Brandon’s rice is always one of my favorites. Not sure if I prefer this one or the Anago more but they are both excellent. :star_struck:

As always, an amazing meal. Sadly, I once again failed to make it to the empty rice pot club. :smiling_face_with_tear:

Went to Hayato again. Nothing I can add to the discourse beyond it was better than last time, and it was sublime. Pretty sure I was sat next to a few FTCers! Feel free to DM me if you think you were there, since I neglected to ask for contact info, but I think my other posts on FTC make it clear who I am!

Probably the only restaurant I’m willing to fly to in the states just to go to.
