cheesy tomato rice. used some pork shoulder stew i made. had almost no connective tissue so the best part was the gravy so.. and used the cheap bagged mozzarella cheese (sry).

the ratios were off, i think. i went back and compared what i used to the ratios in the pok pok cookbook: this iteration was pretty scaled back in its fish/soy/lime/sugar. for the amount of beef and noodles, i need to use more aromatics and sauces. for soy sauce i’m pretty basic, just the healthy boy brand thin soy sauce from lax-c.
Small gathering of close friends, two whole chickens, one slab of baby back ribs, a box of uni, and lots of sake/wine = a great evening. I know the laws around non-commercial home kitchens change constantly, does anyone know if I would be able to market this kind of thing and sell seats for it?

I think it’s got some legs – we have some friends who grew tired of metro LA / could not afford to buy there so they are in VN/SH/Tarzana. Methinks there are a lot of couples who miss novel dining options they once had easy access to in the city. I would also confirm at least 4 leads (myself, gf, her parents) for such an event!
