We prefer it mix as tue flavors work very well together. I found quiches with greens alone often a bit one dimensional
I often use 3 or 4 greens (2 parts spinach, 1 part arugula, 1 part curly endive or escarole, some leek, sometimes some Swiss chard or kale) in spanakopita, plus green onion, cooking onion, dill, parsley, eggs, black pepper and feta, so it has a bit more going on
Agree when it’s just one green and egg or cheese, it can be pretty one dimensional.

Leberkaese-Gulasch - leberkaese (translation is liver cheese but no liver or cheese was harmed in the making) is a German speciality (kind of a meatloaf) and we have luckily and “old fashioned” German butcher (Dittmer’s https://www.dittmers.com )who makes it (and many, many other things) in-house.
Here you make a quickly gulasch by sautéing diced leberkaese, red and yellow bell peppers and onions and then cook it with tomato passata, vegetable broth and Italian seasoning. Finished with some parsley and served over rice.

I probably won’t make a Coq au Vin with bacon or lardons again. I will try a braised white wine chicken without bacon/lardons/pancetta again at some point. Hmmm, maybe a semolina olive oil cake and macerated berries or something based on egg whites? Like a Pavlova, there’s gotta be a way to do that with out dairy
