Casserole with Pasta, Asparagus and Cauliflower from an older German cookbook - whole wheat fusilli, blanched green asparagus and cauliflower, scallions are mixed with a sauce made from milk, cream, egg yolks and mace. Topped with parmesan, panko crumbs, parsley and baked in the oven for 15 minutes
Spicy Pork Bulgogi (Maeun Deaejibulgogi) with Seasoned Spinach with Gochujang (Sigeumchi Gochujang Muchim) from Umma by Sarah Ahn - thinly cut pork belly is marinated for 24 hours in a mix of gochujang, garlic, fish sauce, toasted sesame oil, maesil cheong, gochugaru, sugar, white vinegar, lemon juice, ginger and soy sauce. The mixture is stir-fried with carrots, onion, scallions and perilla leaves and finished with toasted sesame seeds.
The spinach is quickly blanched, cooled down, squeezed dry and mixed with gochujang, maesil cheong, toasted sesame oil, garlic, scallions and toasted sesame seeds. Served over rice
Meatloaf with Leeks - meatloaf is done with ground pork and beef, onions, garlic, egg, breadcrumbs, milk and mustard. It is filled with sautéed leeks in a cream cheese sauce and covered with fried onions. Served with more of the leeks and mashed potatoes
Stuffed Eggplants - eggplants are hollowed out, drizzled with olive oil and baked in the oven. In parallel, ground beef, diced eggplant flesh and onions are pan-seared and finished with a little bit of honey, cumin, mint and pomegranate seeds. The filling gets scooped into the eggplant and put back into the oven for a few minutes to warm up everything
Chickpea and Chicken Stew with Cauliflower Rice - chickpeas, diced chicken breast, diced sweet potatoes, onions and garlic are cooked in coconut milk. Finished with baby spinach and lime juice. Served with cauliflower rice mixed with toasted almonds, cilantro and lime zest

Chicken Stew with Vegetables - seared chicken breast is cooked with mushrooms, onions, carrots, broccoli and peas in milk and vegetable broth. Thickened with some flour and served over rice

Black Calypso Bean Salad with Pesto and Shrimps from Heirloom Beans by Steve Sando - black calypso beans from Rancho Gordo are cooked and kept slightly warm. Pesto done with basil, garlic and olive oil and immersion blender. The shrimps are quickly cooked in a mix of water, white wine, quartered lemons, fennel seeds, bay leaves, coriander seeds, peppercorns and garlic. Everything is mixed together with cherry tomatoes and some lemon juice
I am thinking of doing a batch, but on the smoker. Have you ever tried that? There is a recipe in “Flavours of the Southeast Asian Grill” for a Thai version that looks pretty interesting.
I’ve never done it on a smoker but I don’t see why it wouldn’t work. I did it in the oven at 300 for 2-2.5 hours. Let it cool, then brushed it with a little charcoal oil and more sauce just to set the glaze. Now I’ve got them individually vacuum sealed in the freezer.
Btw, I more or less followed this video with some modifications. Beware he’s PG13 for a potty mouth lol.
