they are still the cheapest out of all their competitors right now and probably still have the highest food costs. If they got 2 stars I wouldn’t be surprised if they charged $300 like everyone else

hayato is 350

I love Kato, its one of my favorite restaurants, but there is a significant gap between Kato and Hayato. Ok, maybe Hayato is really a 3*

I don’t know why, but I feel QPR is much better at places like Providence and Kaneyoshi than it is at Kato, although I know the food is very different. I left Kato both times still able to put down a pizza at Bianco.

Melisse is now $399

IMHO Providence, though excellent as it always is, feels like the same menu every time. Whereas at Kato, I am excited to see the next course appear before me at every turn. I’m willing to pay more for that sense of new-ness or innovation when I dine out.

My takeaway from all this is that if somebody could make a tasting range work in like the 175 range they might kill it. There’s a massive gap between the Taco Marias of the world and the Katos.

real talk, if a mid-high end sushi omakase served a single uni course and used nice santa barbara uni instead of baller tier hokkaido uni and charged $150 instead of $200 would you think less of it? wholesale cost of seafood used at high-end sushiya is legit wiiiiild right now.

Yep. Every location of the Enya chain is $300 for omakase, I believe.

Give me Hokkaido uni over SB uni every single time, but I’d frequent a $150pp omakase considerably more often than a $200pp omakase.

Neither uni is superior over the other, as they each have their unique value in their different taste profiles. In Japan, the SB murasaki uni is often more prized by chefs over their own native Hokkaido bafun uni.
