Kato - Extended Tasting Menu

$646.05 pp is a rather bizarre number…
Why not $650?

they’re reflecting the 18% service charge and tax in the price. I’m guessing that’s a result of the recently passed bill. I see restaurants on tock are doing the same thing with prepaid reservations.

excellent dinner start to finish with great ingredients and execution.

I’ve always loved kato’s sauces and would always lament not having rice or enough of it to soak them all up. so I’m so glad they served piping hot bowls of rice with all the sauces at this dinner. it would have been a shame to waste any of them. highlight was the doubanjiang sauce with corn, I ate about four bowls of rice with it.

for the price I would have liked more fish, the portions we got wasn’t nearly enough for 8 people. also we need a lazy susan.

Food looks great, but hearing there wasn’t big enough portions is a major red flag at that price point. I know they’ll listen to you all so hopefully the next group gets some more food.

Agreed if I’m paying 650 I expect portion/fullness not to be an issue.

That dinner does look wild though. Were there doubles of any of the share dishes?

Changes being made as we speak. I had a discussion with them afterwards to talk pro/cons. As I think this can be really special with some tweaks.

Like @PorkyBelly said - pros - food was awesome. Flavor wise everything was super on point

Con- needed more of the fish course.

they wanted to use really expensive Japanese fish. The problem is it limits the quantity cause a whole ndogoro is super expensive (I think a whole one is $100+ right now?) as well as tile fish.

But to me the stars are the sauces. You don’t need ultra premium Japanese fish. You can do a tier lower of fish and have a similar result but save money.

Basically is it worth 50% more cost for 10% better taste? I told Jon I’m not even sure I love black throat perch as a steamed fish. It’s almost more for the flex.

Outside of the two fish dishes the other shared plates were pretty big. Everyone got a generous portion of them

This made me think of a west coast Le Bernardin meal through the eyes of a thai chef. LOVE the sound of that.

If we’re really gonna look through a Taiwanese lens for this meal, the pan-toh ethos doesn’t require super expensive Japanese fish…

Yeah just looking at the pictures, it seems like the food and labor costs are on par with the quality of ingredients, skill on display and the portions received.

That’s where your question comes into play tho :upside_down_face:

Cool thanks that’s what it looked like!

I don’t think anyone should use @porkbelly as the barometer for how much food needs to be served to be full .

Vast majority of people dislike how much food there is at pizzeria sei omakase - it’s oppressive. But he thinks it’s just right.

I was full (and most everyone else) but some more fish would have left everyone very satisfied and wouldn’t have hurt

Sei was a punishing amt of food

I was gonna grab some :taco: :taco: :taco: after but Tire Shop isn’t open on Tuesdays…

My exact words to William

“Please do not use Gary and James are barometers on how much food you need to serve for people to leave satisfied”

It was the right amount of food for me, although I’m a lightweight. The Omakasei just about did me in.

@PorkyBelly no review here other than to say it was a tremendous meal and I’d do it again any time.

Unfortunately im on the moonboy/porky eating scale. Food looked great I was just noting that ppl should def not be hungry after ar that price point.
