Chef Roe, who was second in command when Fumio-san was there, is now main shokunin.
The point of my post was that I felt it was a little unfair to only post negative reviews when the overwhelming majority of reviews were positive.
PorkyBelly immediately agreed that he did that and explained why, and then posted a metric to show that the reviews were in fact overwhelmingly positive.
What a very reasonable, nice interaction we were having.
I’m just not interested in having an argument with you, you have twice now tried to reframe what I’m saying to make some point that is not clear.
Has anyone been back with the new chef working?
I’ll share my own experience since I’ve been twice to the new location and countless times to Kogane. I’ve consistently been greeted with Chef Fumio’s infectious smile, and every interaction I’ve had with him has been warm and respectful. His food is truly exceptional imo, especially his nigiri. The level of precision, balance, and understanding of the fish really shows.
I have, however, witnessed misbehaved customers on occasion, and those situations were far more disruptive to my dining experience than anything coming from the chef. I personally have never seen anyone get kicked out.
I also want to mention that his wife, Natsuko San, is serving and she is lovely and genuinely welcoming. Taken together, this is not an environment anyone should shy away from. If anything, it is a place focused on delivering great food with care. I would absolutely encourage people to give it another opportunity.
Finally, there is a page of add-ons to the $160 dinner Omakase that are great additions to the meal and price wise, brings it up to the $250-$300 price point.
