Chef Jude is testing out this new dish. I really liked the addition of the fresh oysters which i haven’t seen much of in ktown.

Holy shit, I don’t know everything they did to this pig but it was the best pork chop I’ve ever had. The heritage berkshire pig (most likely given daily facials, foot massages) was brined for 18 hours using pink salt, and then coated in a rye xo made from the leftovers grains from their bonji fermentation process, and then grilled.
The result was this pinkish hued meat that was incredibly tender, moist, and full of flavor. Usually the best part of the pork chop is that delicious fatty meat you get near the bone, this was basically that part for the entire chop.
It was also brilliantly paired with sweet summer squash, fried shallots, and super sweet and smoky cherry tomatoes (aka msg balls).
My favorite new dish since the duck crispy rice and I liked it better than hatchet hall’s and chi spacca’s tomahawk. I said it. @Chowseeker1999, @TheCookie, @Bookwich, @A5KOBE, @attran99, @CiaoBob, @chewchow, @J_L

Chung Ki Wa in ktown is one place I know that serves bossam with raw oysters. It’s actually a very traditional way to serve bossam. I’m sure there are other places in ktown as well.

Kobawoo too. Sometimes Jun Won. My fave is with fried oysters, though. It gives a little crunch needed for texture.

no yuzu shavings. which version had yuzu shavings? I don’t think i had that before.

i remember they used to have them. usually on the citrus ones.

is that new? last time i was at kobawoo they didn’t serve any oysters which was surprising for a bo ssam specialist.

Went to the pre-Dodger game buffet, 5:30-6:30 pm, $45 per person. Buffet includes the following:
Bing rolls, romaine lettuce with almond vinaigrette

Bounty bowl, stuffed peppers and buttermilk


Boneless fried chicken

Smoked pork shoulder (main protein) which you eat like a bo ssam.

At the end of the meal they ask you to wait while they get the fried rice made from the smoked pork shoulder

I don’t know if there was dessert since I left to go to the game but they do give you some homemade chips to take with you

Overall a nice pleasant meal and I was pretty full, Highlight was the smoked pork shoulder, tender with a hint of smoke. Fried rice was good too but I was stuffed so I couldn’t finish it
I would check with them for the next pre Dodger game buffet because I think they have a different main protein, I think the next one is on September 13.

Now the best way to pre-game before a Dodger game. Did you drive over to the stadium right after? Was there enough time to make it to the game?

I took a Lyft to Union Station and took the Dodger Express Bus into Dodger Stadium (it’s Free). Got there in the first inning. I’m sure if i took a Lyft or drove to the game i would’ve gotten there in the 3rd or 4th inning.

damn! Went on Saturday night for a wine dinner - no pork chop on the menu. Would have crushed that.
