mori omakase
I was underwhelmed with my first visit to morihiro (sushi seemed rushed and fish was overcooked) but decided to try out mori’s special omakase and damn mori-san nailed it, I was impressed. mori’s nigiri immediately jumps to the top of my takeout nigiri list. I ate it immediately so the rice was excellent, knife work was spot on, and the temp was perfect. mori-san did use a noticeable amount of wasabi, which i didn’t mind. once again, the perfectly balanced flavors of the kohada was one highlight in a box full of highlights.
the other incredible standout was the whole kegani with kani miso. the meat was sweet as dungeness and the kani miso’s umami creaminess with a hint of bitterness was a perfect complement.
not sure how mori-san is getting his sb uni with all the storms going on, but the uni was excellent too.
my only quibble is the soy sauce came in packets. pro tip: BYOSS, I paired the nigiri with some leftover hayato soy sauce. @NYCtoLA

Wow. I assume you have to DM Mori-san to reserve this–was it hard to get one and to coordinate when you wanted it? How much was it? And is it meant for just one (presumably very hungry) person? The nigiri would be hard to share!
it wasn’t hard at all, you can contact them through their website or just call and ask for mori’s omakase. i was able to pick any day and time. they just need at least seven days advance notice. the omakase ranges from $200-$300 depending on what mori-san chooses and if you want appetizers and dessert. what i got was $300.
there’s plenty of food for two people and you can ask for two of each nigiri if you want to share. because i’m a glutton and wanted it all for myself i asked for one of each nigiri.
shout-out to the insanely rich and fatty nodoguro shioyaki that i saved for my japanese breakfast the next morning. it just melted over a bowl of piping hot rice.
i also take back my chewy unagi comment. after warming it up in my zojirushi, it became tender and delicious. that whole box of grilled fish really goes best with a hot bowl of rice.

Tangential bonus pro tip (I know, this belongs on the Home Cooking thread): I figured that since Mori-san mills his own rice, he might have nuka/rice bran for sale. I’ve been wanting to try making my own nukazuke/rice bran pickles, and of course that’s a perfect pandemic project. And yes, Mori-san sells fresh nuka for $2 a pound. My nukadoko/pickling bed is a week old and coming along nicely, though it will be a few more weeks before I’ll be able to get the flavor I’m aiming for.
