Closer to three stars than one star for me. One of the most talented chefs I’ve ever encountered. He trained at the same Tokyo restaurant as Brandon Go (of Hayato) but morphed traditional kaiseki into something more fusion-y and less austere, with amazing success. The pastry chef is very impressive in her own right. Overall, phenomenal — one of the best meals I’ve ever eaten.

Huh, interesting. I ate here in 2023 and wasn’t blown away.
It was all very pretty and mostly quite tasty, but I sort of remember feeling a bit iffy on how things tied together and very little of it was a “knockout”.

Had a good meal here. But compared to some of the others I did on the trip (birdsong, harbor house, californios) I don’t remember any dishes…
