The poor translation is kind of charming. They should stick with it as most people will recognize the chinese donut anyway.
We have a place up here in San Mateo called Gao Kitchen which serves a wok fried pho (is it pho tai lan?). It’s delicious but more visible pools of nuoc beo. I always assumed it was a southern thing. Seems like something southerners would do so I’m surprised it originated in Hanoi.
Pho Thin makes a very specialize bowl of pho where the meat is stir-fried beforehand. Please don’t think all northern pho is like this. Quan Sen makes pho that is more indicative of Northern pho.
You can ask for nuoc beo at any pho restaurant. They will simply ladle it on top of your pho for you or they will bring it out in a small bowl on the side.
I don’t think anyone thinks that. There’s a lot of pho bac in OC already. Everyone is interested in the wok tossed pho because it’s a new trend/innovation to OC that few have tried in comparison. Pho Thin has both with the traditional northern style also on their menu. With nuoc beo, I’m saying that at Gao Kitchen, there’s heavy nuoc bao as default already in the dish. You don’t have to ask for it on the side like at other places, which becomes a problem if you want delivery and they don’t have that option on doordash.
