I don’t get the incipient bagel chauvinism, whether about Pop Up or Courage in LA. I was born in the City, grew up on bagels, am Jewish blah blah. Pop Up is corny branding but good, better than say Bagel Talk or Bagel and Co. Most of the folks I know who grew up on the UWS going to H&H and then Absolute like it fwiw. And there’s not a fixed, eternal bagel NY bagel. Bagels were really different things 100 years ago, as I’m sure they were in the old country.

I have no interest in ripping a fluffy bagel to dip it into some odd flavor of cream cheese because it’s all over social media. ymmv.
There is no single best bagel like there is no single best slice – there are good ones in every neighborhood, so eat one near you.
Most tourists wouldn’t know the difference between a good or great bagel, and most locals wouldn’t agree on which is which.
Re Indian – try Chatti on your next visit.
I like pop up too but consider it more of a yummy bread than a classic ny style bagel. It’s delicious hot out of the oven but meh when cool, and not as chewy as a classic bagel. I believe the holes are poked instead of rolled like classic bagels.
Like i said, ive enjoyed it hot but i probably wouldnt recommend it to a friend if i wanted to showcase a ny bagel. As a good bread, or in addition to somewhere like bagel market, sure.
That would be Bagel Hole. There used to be a couple others still doing it old-style but ro my knowledge they’re the last.
Fair. My point is that our current nostalgia for a ‘classic’ NY bagel is for a bagel 3x what it was in the Ellis Island era. And in the old country bagels weren’t eaten with cream cheese let alone smoked fish. It’s fine to not like any incarnation but these things evolve.
Ya, i dont need a third wave bagel… happy with standard east coast bagel.. ess a bagel usually suffices.. but thought i’d get an improved rec for once. (am from a jewish part of brookline and well versed).. also grew up in the ussr where our bagels were long and thing and never had toppings
