Yes, but it was a special menu for that particular night.

Just for future reference… archive.is or 12ft.io (and if do find their writing enjoyable, compelling, or at least useful–eventually pay them).

This is beautifully written and relatable. 100% get the stress of maintaining a star. 1000% get the strain COVID put on everyone.

But if you’re not going to change your behavior, the whole, “it’s been conditioned into me working under classical chefs,” is total fucking horse shit.

Plenty of lauded and/or starred shops don’t do this. They explain how not to fuck up, correct you if you do it one time, and then yell at you. I wrote five paragraphs on this before remembering FTC isn’t my therapist. I also don’t pray on anyone’s downfall. But fuck, just… do better.

Or if you’re going to be a piece of shit, the meal should be absolutely flawless…

I was wondering if the patron is a FTC member.

Kushiba trial run at Shibumi tonight. It was packed, they definitely were not expecting it to be so popular. Good QPR, and skewers are small so you can get a wide variety. Easily one of everything from this test menu. Wagyu > onion > chicken

Bonus points for the weird and fun dashi hot toddy. It’s their dashi and Japanese whiskey. Savory, not sweet.

Sakura mochi dude is now trying to introduce kushikatsu to Angelenos? Ten years ago, Kushikatsu Tanaka was already specialized in serving (you guessed it) Osaka-style kushikatsu, to customers on Sawtelle…

Ok, I guess I am back on defense here.

Sure, he is wrong in saying “non existent” but what they are trying to do is different than Kushikatsu Tanaka.

Kushikatsu Tanaka is a chain with over 100 (?) locations across Japan. More of a cookie cutter experience.

Kushiba should be a cool place to have great fried food on sticks and good drinks. Should be really fun. Looking forward to it!

Man, I really miss Sunset Beer in that plaza…

i remember there being a pretty good Kushi Katsu place in the South Bay in the same strip mall as Asa Ramen, around 2010? They had a really good ramen on the menu too. i think it was actually called Kushikatsu, anyone remember?

Tried it out tonight. Solid! Opening week hiccups aside, food was tasty and the fry was light on everything. Drinks were good! I did find myself using the salt provided on everything. I think it’ll be more of a drinks and snacks vibe than a full dinner but with reservations and people hanging at tables idk how that’ll work for them.

We think highly of Shibumi. All the dishes have excellent ingredients and show an exquisite level of care. The tasting menu for $125 is a good value; reminds me of Baroo in that regard.

They have both a la carte and omakase now. This would get my vote for most underrated restaurant on FTC after Vespertine. Phenomenal quality level for the price. Some dishes are among the best things I ate this year — skipjack sashimi, chinmi, and peaches. Interesting stuff like sujiko (salmon roe cured in sack).
