Shin Sushi - OOE omakase

Enjoyed it. But Peony liked it more than I did.

I prefer firmer rice with more vinegar—rice that is more assertive. Peony disagrees.

Some nigiri were too light with salt / soy sauce for my tastes.

The miso soup was excellent as noted.

Had to go back to Shin to confirm the recent Michelin star :laughing: JK! Shin still got it and it’s one of my favorite places to go. Nigiri heavy omakase, each piece tastes fresh and amazing, small and homey atmosphere, and Chef Take has a super happy and hilarious personality.

Some notable things:

  • He picks up his fish every morning from the fish market.
  • Chef Take and Chef Kaneyoshi are (still) best friends.
  • Shin keeps prices reasonable by having low overhead costs by having just him and his wife run the place (~$200 before tax, not including drinks)
  • We got to meet his daughter too. She’s only a couple years older than the number of Michelin stars he has :laughing:
  • Highlights for me were the fish bone miso, charcoaled otoro, and uni
  • He didn’t offer any supplements at the end or I would’ve ordered at least 3-4 more pieces
