I am skeptical of the rice/water ratio in this recipe 1:2 or 1:3 if bomba seems a tad low. Jose Andres posted a reasonable recipe too: Paella Valenciana - Longer Tables with José Andrés
L’Espanola also says 1:2. I’d think stores that sell everything for paella would get a lot of feedback from customers if their recipe weren’t solid. Mark Bittman’s recipe is even drier, 1:1-3/4.
We ordered for delivery and thought the food was decent for delivery. We would order again. The gazpacho (which comes in a plastic bottle with nutritional information) was delicious–nearly perfect to my tastes. The paella negra would be in the top quartile of “arroz” dishes around town, though the seafood quality was lackluster and it tasted more like a Latin American arroz negro than paella. The rice was overcooked but most Americans prefer mushy stuff regardless of what they may say about liking al dente. The brussel sprouts were obviously just thrown on the menu for diners who demand vegetables.
I think this is consistent with folks’ views above. I would have been frustrated to be eating this food in a restaurant.
That might be more a reflection of a take out dish than their general paella quality - paella is something which doesn’t travel well in a closed environment without getting mushy
This NPR bit is almost 20 years old, but it remains a good intro paella recipe, from a chef I trust.

Teleferic has a whole market next door that sells many things including pans for paella. I am sure there are much cheaper ones elsewhere but I haven’t price-shopped them at all.
Yeah most of them seem to be from boutique shops that have marked them up. I feel like I could get a decent comparable pan from a large online retailer but it’s hard to gauge those things until they are delivered

Sur La Table and Williams-Sonoma carry them. Amazon would also offer a variety of paella pans.
yep… i got the Garcima 20" (50cm) Pata Negra Restaurant Grade Paella Pan, X-Large in 2022 and it’s been doing great. need to get more rice and do another.
