Will be in San Sebastian soon and want to try a chuleton from authentic Rubia Gallega without having to go to El Capricho. Is there a place in town? Do places like La Vina, Txuleta, or Bar Nestor serve Rubia Gallega beef?
La Viña’s chuleta de buey was chewy, delicious, and they said it was from an actual buey (ox). The one we had the next day at Etxebarri was tender and obviously not from a real ox. I’m not sure if buey refers only to draft animals (which we did see out in the country) or also to dairy cows (which Rubia Gallega reportedly are).
