yeah, but i think Vespertine is pretty controversial…it seems like Destroyer is pretty widely liked, but Vespertine is much more iffy - everyone i know who’s been to Vespertine or Red Medicine hated it.
it would’ve been nice to see maybe Chris Kostow from TRAM do a collaboration - I know they did a joint dinner at least in 2017 for the “12 Days of Christmas” series. maybe Katianna and John Hong or Chris Cosentino? I didn’t realize that Cosentino had a Maui restaurant; it looks pretty different than what he’s done before.
I suspect, the Destroyer reference is hinting that the style of the food from Jordan Khan will be from there. In the same way that his Sunday Supper at Kato was Red Medicine. Much more practical to execute at the price point and number of diners that will likely pack Birdie G’s
I don’t see why Vespertine–at least in its post-pandemic form–is controversial. A few dishes are idiosyncratic and it’s all a little bit avant garde, but most dishes are straightforwardly delicious. Pre-pandemic, it was weirder, so I could understand disliking it.
Yeah I don’t think it’s controversial so much as more people have been to destroyer and that’s a more recognizable calling card for people who might go to birdie G’s (even for a 125$ dinner).
No strangers. Last year I went to a few. Dishes were scaled in size to your party. So if there are one biters at the beginning you get one per person at the table and if there are large format dishes they change in size. A lot of the dinners last year were a TOTAL steal for 125. let me try to dig up menus
Some of the people working there think that they will reopen in a new location. The rough location and dealing with the city of Santa Monica seem to have made this is a losing battle.
