CANTO VI wine bar in Chatsworth

Canto VI is a new(ish) wine bar located in Chatsworth, deep in the SFV. It’s been open about half a year and without a doubt my favorite place to eat and drink in all of the valley…

While most wine bars may have some bites that range from average to good, they usually play the supporting role. Not in Canto VI’s case, where Chef Chester Hastings whips up a STELLAR menu with not a single miss on it. Pastas, pates, confit duck leg, steak, & cheeses like Rogue River Blue are comedically divine. The fries are extra crispy and topped with shaved bottarga  Owned and ran by Brian Kalliel (former Somm of Melisse for 15 years), Canto VI focuses on old world European wines. The cocktails here are also very good. To put it simply, this place is the perfect date night spot and I urge all of FTC to make the drive out here. It is shockingly good and they have live music twice a week which boosts the ambiance and joy factor.

Completely agree. Brian and his team have something special at Canto VI. My wife and I stopped by for the first time (won’t be the last) on Friday. The wine selection is impressive, the pours are generous, and the food is very satisfying. We shared the hooker’s pasta (least successful dish of the evening - was hoping for a more flavor forward version), the calamari (outstanding grilled version highlighted by Calabrian chilis in oil) and the chicken piccata (plenty of capers and lemon forward).
