César in nyc

My three star dining experience (5 places total) is not much as board members here. But I think it’s probably most intense flavored dining ever.

I know chef dosen’t have three at the moment but he will get three in no time.

Highlight is unfortunately every single item :joy:

Just pure incredible. Probably lot of shiro dashi and msg but who cares when every course is literally nuclear flavor bomb.

Potato chip is slightly milder and less seasoned than other course but I think it’s pretty intentional to prevent palate exhaustion, which was middle of course.

unrelated but there’s an awesome shochu and japanese whiskey bar a three minute walk from here that’s often full of japanese expats and industry called bar mutsumi - the okkate tanto folks were there when i visited. it’s by the group behind hirohisa and sushi ikumi and the bar snacks are prepared at hirohisa. also bar moga nearby is full of industry folk, too (okkate tanto folks were there too on the same day, haha, along with a bunch of other folk).

If you really need to point out cons of from Cesar is only

  1. Menu has lot of supplements so it can be quite pricey. First time seeing supplement cart lol.but I think it’s smarter than struggling on food cost and business since basic menu option is very affordable and even if you don’t do supplement, your whole menu is very enjoyable.

  2. Menu is rather safe, repetitive components like dashi gel and not amazingly presented like three star restaurants Ex) el cellar de can roca’s super creative presentation or Noma’s crazy ingredients. I get that nyc ingredients are also somewhat limited. Yes I know you can get stuff from Europe or Jersey or upstate but California is honestly easier to get high quality fruits and herbs that is more vibrant flavor than here (I had event in nyc, whole manhattan have 0 chervil :joy: definitely limited fresh vegetables and herbs than California )so chef choose to use lots of protein like foie, uni and lots of shiro dashi, dashi to make up limited ingredients.

But honestly no doubt chef’s food is amazing and lot of chef friends agreed at least flavor is always 10/10.

You can definitely get chervil at the Greenmarket when it’s in season, and likely at Whole Foods or Fairway or Gourmet Garage when it isn’t. Was this event a very long time ago?

stretch pizza domino park opening event a couple of days ago i think. (sadly missed it)
