Their carbonara was the best pasta and one of the best food ever entered in my life. Unlike food made in fine dining (which you get impress with fine flavor and textures) this carbonara is rustic but gave so much joy while eating it made almost spiritual experience while eating. It was “soul satisfying moment” I guess when rustics food gives you good experience it feels that way

Texture of pasta was incredible definition of perfect al dente is this texture and crispy Guanciale had multiple different texture, crispy, chewy, meaty, and gummy(in good way. This made so much enjoyment because pork flavors linger more longer with pasta chew) with incredible sweet porky flavor with almost slight smoked. Black pepper was abundant but not spicy but aromatic and cheese has depth of flavor and egg was so pleasantly creamy. Temperature of pasta was perfect.

Recommend eating outside when weather is good. Incredibly happy while eating. Maybe it was even better because I didn’t have high expectations because place is old and kitchen was shitty :joy:

You don’t need a good kitchen to make great carbonara! or most of the other classic Roman dishes.

Yes but you should look in real life :joy: but I highly recommend food is institutional level must visit place in Rome. Also owners are soooooo nice too.

Unfortunately it was salty this time.

Best ever moment comes at unexpected time. Unfortunately it was not religious experience this time.

Learned mood and environment at moment determines so much on experience also. Crazy
