Debating induction cookware vs adapter plates

We bought a new stove in our new apartment (we live in France) and it’s induction. I was going to use an adapter plate we have but I was completely unaware that adapters were actually quite bad for induction stovetops. I had no clue.

What’s the gear that needs non-induction?

  • Primarily a Moka Pot, twice a day
  • I was hoping it would also be for two frying pans I have that are not induction friendly. One is an omelette pan, I could theoretically get another. The other is a larger high sided pan which isn’t as vital since I have an induction friendly other one that is as good.
  • A nonstick large pot I was hoping to use. Not expensive, I have others that are induction friendly, it’s just a shame, really good pot.

So, I don’t know if I just get a new induction moka pot, a new induction omelette pan, and get rid of the pot and those 2 pans I have now and just call it a loss. Or can we use the adapter plate we have?

And while we’re on the subject, for the people who say the adapter is horrible, why then are people ok with using carbon steel or enamelled cast iron on an induction stove? Those aren’t induction either, they just happen to be ferrous. Don’t they also heat up the induction hobs?

Thanks for any and all help.
