Guiso Latin Fusion - Healdsburg

This was the highlight of our short three day trip this past week,
Salvadoran, Carribean along with other flavors.

The chef is Carlos and the very personable, lovely petite waitress,
his sister Valerie. They are from El Salvador.

We started with the Elotitos, sliced rounds of corn on the cob
with a more restrained touch than typical Mexican elotes.

The pupusas (3) a smaller version that what we’re accustomed,
were the perfect second appetizer, amazing pork (only option)
with the best spiced curtido we’ve ever had.

The Cardeo a La Barbacoa prepared medium rare was stellar.
LadyPB ordered the Camaones Borrachos, the saucing was
quite good as were the yucca fries, but the prawns didn’t
measure up to the rest of the dish.

Both the Bokish Albarino (7.5) and Philip Staley Tinto red blend (9)
paired nicely with our choices. I looked at Big John’s for the Tinto
but had to settle for a couple bottles of his Grenache.

We shared the Creme Brulee with hibiscus poached pear
for dessert which was also a winner.

Can’t wait to return. They don’t have a website and their Facebook
leaves much to be desired. Sure hope they can make it.
