Did your water change, or the kind of sugar you’re using?
The most important thing is good lemons. Roughly 1/4 cup lemon juice per cup of water, but acidity varies so you need to dilute and sweeten to taste. Using simple syrup instead of sugar makes it easier to sweeten to just the right point. Personally I prefer no peel, just free-run juice.
I fixed it. I just kept tasting and adjusting. pretty good now. I am starting off with shitty lemons. My neighbor has a bunch on their tree. They ain’t meyers… but beggars…I’m grateful.
I thought this was pretty revolutionary, "State Fair" Lemonade - Best Lemonade Ever - Food Wishes - YouTube. I have used the same technique with limeade. Really make a difference.

I messed this up. way too much peel taste. Will perfect it tho. I think it can be a winner.
I suggest making a second batch of simple syrup with lemon zest. Add that until you get as much zest flavor as you want, then add plain simple syrup until it’s as sweet as you want it. In this recipe I’d skip adding the lemon juice at the end.
When I was bartending I loved making super rich one-off lemonades. Almost equal parts straight lemon juice to simple syrup. Just a bit more lemon juice than syrup. Shake w/ ice to dilute, double strain over fresh ice.
Of course it helps having fresh lemons from SMFM
Plus i used the same sugar and lemons always so it was pretty dialed in. YMMV but fun recipe to tweak
