Holbox by Chichen Itza

Yeah I feel like that happens almost zero percent now.

I actually was able to use that trick last time I was there though

Was downtown mid afternoon got a table seat at 245 in the afternoon no wait. The line fluctuated from 2-3 ppl to about 15-20 when I was leaving at around 320.

Food and service is great. Got a seasonal special soft shell crab. Was a little too battered for my tastes the bites with less batter tasted the best. Along with scallop taco and tuna tostada. Everything is still good and they got rid of one of their salsas. I guess the trick is to go weekdays on a really off hour.

5:50 on Thursday minimal lines. Situation much different 15-30 mins later.

I went a couple months ago for the soft crab special. Had missed it the previous year and was suffering from fomo as soft crabs are my fave. Crab was flavorless and small (I’d guess Indo swimmer crab but did not ask). Batter was too thick. The sriracha aoili smacked of utter indifference.

I have a lot of respect for how Holbox is run but there are definitely some duds on that menu.

This is actually my first dud there, but agreed soft shell crab is definitely a pass and living in the burbs that is generally bereft of seasonal seafood I order soft shell crab every chance I get if I think it’ll be good but this was definitely not that.

Roughly 15-20 minute wait (max) at 1:30 PM today (Wednesday). Could also get lucky with counter seats. Couple in front of me had one scout out and secure before coming back for her partner. Remained full for my wait otherwise though I saw plenty open up while waiting for my food to come. Line initially started out the door but moved pretty quickly and thought I’d be waiting longer when suddenly I was at the front (happy surprise!).

Got oysters and they were great but on the small side. Also ordered the tuna tostada (first time for me) and thought it was great. A little bit of the weakest hot sauce worked really well for me.

The Grove is kind of odd but whatever floats his boat.

not exactly “the less glamorous corners of his adopted hometown”

The less glamorous corners of LA, like:

  • The famous downtown food market
  • The famous Michelin-recognized seafood restaurant
  • The famous comedy club on La Cienega
  • The hiking area next to George Clooney’s house
  • The outdoor mall

(also I like Seth Rogen and it was v fun when I saw him at the Magic Castle once)

I used to live at the top of Argyle in a College apartment and loved walking around that reservoir. Amazing that’s it’s hidden just minutes from Hollywood and Vine.

Went to the Holbox Summer Bash event on 8/25. Here’s the scoop.

  • Its great if you’re having a hard time finding res or want to take a group of people to try the flavors and highlights of Holbox.
  • They said that they know that their tasting menu reservations are hard to get and they want to attempt to let as many people try it.
  • $130 per person before tax and tip
  • Held outdoors in the parking lot of the same space. They had closed off and decorated a large section of the lot. It actually looked pretty good. They also had a DJ playing music all night.
  • Event is sponsored by Resy (not sure what this meant)
  • There were long 4 (i think?) really long rectangular tables set up and people sat in rows on both sides of the table.
  • Dishes are served individually per person except the last fish dish. The fish was served family style but so many people were full already so there was plenty to go around.
  • Each dish is introduced by Chef Cetina as he speaks over the microphone.
  • No alcohol but I saw some people bring their own in flasks or water bottles
  • Started at 8pm and ended around 10:30pm
  • Favorite dishes: Ceviche de Erizo con Corvina, Tostada de Atun, Tamal de Abulon, Scope de Mejillones

Sorry for the dark photos, it was all outside.

do you guys know how often the tasting menu changes? here’s a photo of the menu when I went in mid-March.

it was a great experience and Chef Gilbert Centina is a great dude, easy to converse with during dinner, likes to answer questions and keeps things fun. I preferred the hot dishes over the cold dishes which he said is not the more common response.

I recently went before a show at the Shrine and waited in the long line. I got some of the usual standouts: Tostada de Kanpachi & Uni, Ceviche de Atun, Scallop taco, Taco de Pulpo en su Tinta

All really good of course but I will say I preferred the tasting menu all in all and am looking to try it out again.. reservations definitely go quick. Also, I love seeing what’s inside their freezers. Love seeing links of their fish sausages, those are so good. During dinner, Chef mentioned that he’d like to experiment with a seafood market service in the future, offering various amounts of fresh seafood, fish sausages, etc., to interested customers. I haven’t heard any updates since, so who knows but I guess it’s something they have in mind.
