Would it horrify you to learn that we didn’t heat up jarred marinara growing up?
We’d been using English muffins instead of hamburger buns for years. Then got a shrimp slider recipe that suggested brioche slider buns but I think for full size burgers I want to go back to E. muffins (toasted).
English muffins are great vehicles for sandwiches. The nooks and crannies capture all the juices dripping down from the meats and filling. There was a great Portuguese burger place in Midtown Manhattan in the late 90s early 2000s that had a great burger served on English muffins. My friend and I were convinced this was going to be the new big thing. We were wrong.

Wild Patagonia Red Shrimp from Dry Dock Fish Co. They come shelled, cleaned and site-frozen, not treated, no poly-whatevers - so easy for dishes like this. The dipping sauce is Peanut-Coconut Nuoc Cham from a Red Boat “Phamily” recipe.

I spent the first 25+ years of my life in the South. Not eating tortillas. Not eating (corn) chips. Eating grits regularly. I never ate blue grits. I never saw them. I never heard of them. That’s why I looked them up. Sound interesting. With the right meal.
