If you want tomatoes “melt” into your sauce it is hard to use canned diced tomatoes as they tend to be treated with calcium chloride which lets them keep their shape even after cooking. So grating fresh ones is a fast way to get “untreated diced” tomatoes (and it is often a fast way to skin tomatoes if you don’t care about the uniform dices)

Penne alla Norma - Quickly pan-fried eggplant cooked with celery, onion and garlic in a sauce made with diced tomatoes and white wine. Finished with some diced mozzarella and dill.

Looks good but strictly speaking pasta alla Norma needs a lot more tomato and ricotta salata.
