Polenta with Lila and King City Beans in Tomato Sauce from “The Bean Book” by Steve Sando - tomato sauce is made by cooking onion, garlic, diced tomatoes, tomato paste, sage, red wine vinegar in chicken broth before adding the cooked lila and king city beans. The sauce is finished with crisped pancetta and parsley. Served over polenta and topped with parmesan
Pickerel and shrimp yellow curry
I winged this one, with a new Thai Yellow Curry Powder I received in an Advent calendar.
Sauteed onions, garlic and grated ginger, then added curry powder, carrots and celery for a minute. Added a can of coconut milk, a little brown sugar, brought to a simmer. Added some halved cherry tomatoes and pickerel. Simmered until the pickerel was almost cooked. Added the shrimp, brought to a simmer, them added chopped coriander leaves. Squeeze of lemon before serving, as I didn’t have fresh lime on hand.

Korean Potato Salad (Gamja Saelleodeu) from “Koreatown” - normally more of a banchan but here as a main with some sausages. Russet potatoes are cooked and then mashed but with still larger chunks to have some texture. Mixed with a hint of sugar and cooled down. Mixed with diced carrots, apple, corn, cooked egg white, mayonnaise and yakult. Topped with crumbled egg yolk
How was this combination? My mind is kind of blown. I like yakult but would have never thought to mix it with mayonnaise!
It gives a slight hint of sweetness and tang which we liked - Not overwhelming but noticeable.
No photos: kielbasa and cabbage (recipe from Dan Pielosi/NYT cooking) and California white rice from my latest Rancho Gordo box. Straightforward recipe and I’d try it again, but maybe manage the output levels? I have A LOT of leftovers. I really liked the rice however I believe the pricing is too damn high for me to purchase this type of rice on the regular.
