So, it doesn’t look like much but really yummy. Bought one of the Brown (head on feet on) chicken from 99 Ranch. Made a stock from the carcass, then braised it with veggies from the farmers market (cabbage, carrots, green garlic, onions)

Indian-Inspired Cottage Pie - sugo is cooked with ground beef, onions, garlic, ginger, cardamom, coriander, chili, cumin, garam masala, diced tomatoes, tomato paste and beef broth. Mashed potatoes are made with russet potatoes, egg yolks, butter and milk. Baked in the oven for 30 minutes. Served with a salad made with kohlrabi, red onions and cilantro and a vinaigrette with olive oil, yogurt, lime juice and zest

Japanese-Style Chicken & Vegetable Curry based on a Milk Street recipe - first you make your own japanese-style curry powder by toasting, grinding and mixing dried shiitake, brown mustard seeds, coriander seeds, fennel seeds, cumin seeds, turmeric, ginger, paprika, black pepper, cloves and cinnamon. This curry powder is then used to cook with boneless chicken thighs, onions, carrots, potatoes, red bell peppers, ginger and garlic and thickened with flour. Finished with some soy sauce and mirin and served over rice

Yes just classic potato carmelized onion. I had left over sliced fried potatoes from a burger place and just carmelized some onions so it was pretty easy since I didn’t have to cook any pototoes.

Would’ve liked the outside to be a little less brown and the inside a little runnier but I was using vacation rental equipment and the dial markings were rubbed off so I couldn’t see the temp settings lol

Pasta E Ceci, Italian peasant cooking. These incidental vegan dishes really take the time with the base and simple techniques. Bloom chilli flakes, garlic, and herbs first in a cold pan with olive oil, let the sofrito really cook down, let the tomato paste turn color, deglaze, use up the remains from the canned tomatoes, etc. because of the legumes more salt than you think. Ditalini would be choice for pasta. Mash up some of the legumes to make it creamy. Baby sitting the pasta is a must


Layered dumpling wrappers with oil salt and scallion and then rolled. Pseudo quick scallion pancakes. Won’t get the flakiness but definitely th flavor. Really disappointed in a lot of places in SGV with the lack of scallions in their pancakes. Is that a mainlander thing? There is barely any scallions in most scallion pancakes in SGV

Layered Beef and Root Vegetables in a Spicy Coconut Curry from “Braise” by Daniel Boulud and Okra with Tomatoes from “World of the East Vegetarian Cooking” by Madhur Jaffrey - wonderful complex flavors in this curry. Top sirloin is cut into thin stripes and marinated overnight in a mix of ground curry leaves, cloves, cardamom, ginger, cinnamon, black pepper, red pepper flakes in yogurt. The next day, you quickly sear the top sirloin stripes before making a sauce in the pan with onions, garlic, white wine vinegar and carrot juice.

Meat gets layered twice times with thinly cut turnips, celery roots and potatoes before adding the carrot sauce and coconut milk. Cooked in the oven low and slow for several hours and finished with some cilantro and coconut flakes.

Served with a side of braised okra with tomatoes, onions, garlic, coriander and lemon juice.
