This was supposedly fixed, though the issue is new to this site.
Since your post, others are now chiming in on that thread. Looks like the problem has re-emerged due to another change in instagram metadata format. Will just have to wait until Discord updates with a workaround.

Some change on Instagram’s side, I had to get a token from Facebook and update the Discourse settings.
I told support that the old links are still broken. We’ll see if they can apply some kind of global fix.
