that may well be, but does that diminish from the thrust of the article - which concerns all the other establishments within the momofuku empire? i’d submit that wells does make a good point that many see chang as the innovator whereas chang remains the visionary, but has stepped back and let others better suited implement the vision using their talents for innovation. this is also true at majordomo as well. chang apparently just happens to have set up housekeeping in LA so there’s a natural assumption being made that he’s behind a lot of the innovation. but if you look at the momofuku cookbook, chang readily gives credit where it’s due for any momofuku staple.
I’m just saying that if Wells had eaten at Majordomo he might not have said the menu is loaded up with dishes that are “big and showy and seemingly designed to dazzle the high rollers.”
Ha, I suspect they’re trying to clean out the freezer of leftover foie. Yep, it was the same prep as before the ban, an iteration of the ko dish with lychee and pine nut brittle, which i actually prefer for its textural contrast.
I’m not sure the ban is actually in effect yet. The Supreme Court decision sent it back to the lower court, which had to formally rescind it. I haven’t seen any report of that (not surprising since almost all of the journalists who reported on the Supreme Court decision mistakenly said the ban was back in effect immediately).
Anyway there was never any law against giving it away, so long as it’s a legitimate comp.
Maybe it depends on what you think of as a baller. But in my book Majordomo is too quirky for most high-rollers or ballers or expense account diners. Don’t they usually go for big showy steak houses or high-end Japanese places?
I love Pete Wells, but is he talking about? I consider Majordomo a fun place, expensive, but not show-offy nor meant for expense account meals for “high-rollers”. It’s very East Coast to be that ostentatious; in L.A. people are casually rich.
The $190 short rib, like all the large expensive items are meant to be shared by the whole table. Sure, $48 per person is pricey for short ribs, but nothing close to “high roller” or anything like NYC where you can order 24-carat gold dusted chicken wings or pizza. That’s high roller. Majordomo is just pricey for the average joe. And family-style at that.
The disparity in the size of these two drinks.
Got the uni box was not good at all. The bings came out piping hot. The boiled chicken was better than expected. We liked the green onion sauce better. Everything else was a repeat and pretty much on par as previous trips.
With the start of salmon season my sources are telling me the salmon donabe is back on the menu (@Chowseeker1999).

the APL short rib is definitely worth it every time.
I’ve never been able to get the BS fries off menu so i can’t help on that.

Bings in order of my preference
- cultured butter and honey
- spicy lamb
- spicy pork and pineapple (basically al pastor)
I would not waste my money on the uni box or the roe. Just my opinion. The weakest main dishes for us have been the pasta. They were not bad per say but just not as memorable as crispy rice with the duck (but its been replaced with smoked lamb on recent visits), boiled chicken or APL ribs.
The veggie dishes rotate frequently but we usually get 2-3 and are generally very happy. The avocado tofu dish is an odd pairing but wonderful.
