Tinder… funny! I’ve seen FTCers going halfsies on things lately. How do you go about splitting things up? Or do you eat together?
for vespertine i just emailed them and they were happy to split everything into two bags, i’ll try the same thing with majordomo. if they can’t split it bring some containers and do some parking lot swapping.
Do you have a splitting partner already? I can’t remember… how many does it feed? I wonder if we could get some of their perfect rice to make Beef Rice with the leftovers. Hmmm…
I sent out the bat signal and found a halfsies partner last night, sorry. The description says it comes with a “beef fat rice kit”, my kind of kit:
Smoked whole plate short rib with condiments, lettuce, Japanese potato salad, and beef fat rice kit (feeds up to 5). Ribs will be partially sliced with instructions included. *** Allergens *** Short Rib: Soy, Sesame, Gluten. Ssamjang: Gluten, Soy, Sesame. Kimchi: Gluten, Soy, Fish, Shellfish. Potato Salad: Egg

Part of the enjoyment of the APL Ribs were that they hand sliced the rib meat in bite-sized slivers tableside, and the rice was prepared afterwards with the scraps leftover.
I’m not sure if the APL Ribs will be as enjoyable if it’s not all sliced up (I guess eating off the bone, regular BBQ style?), and how that beef fat rice will turn out at home.
I’m thinking it’s cut like a honey baked ham, almost cut to the end. and you have to cut the rest off. But let’s see how it looks later. If they have it for next weekend, i might trying ordering it.

i got the half bo ssam and it was also a huge amount of food, can probably easily feed four. this was different from the version i had at the restaurant, which was more spicy, and the versions i’ve made at home with his recipe (less sweet). this was more black pepper forward with a hint of sweetness. it came with three delicious sauces (ssamjang, ginger scallion, hoisin) so you can vary the heat and sweetness to your liking and also some kimchi and escabeche for some acid. i thought it was great and probably my favorite version so far.

That’s an enviable meal! I think you should have added ice cream to your dessert…you know an a la mode with Antico or Bulgarini.
It’s the best way to have these family style shared meals, especially if you’re only a party of 1. I split an order from Vespertine (French Laundry Dinner) and MB Post with a friend. Vespertine required orders in 2s, and the MB Post brunch meal served 4-6.

thank you to the gracious and generous ftcer who went halfsies with me and delivered some delicious LS treats, this turned into an insanely delicious meal and as good as i remember dining-in during the Before Time. the rice was easy to assemble and still incredible, added bonus, it doubles as lip gloss. the only thing missing were those square rice paper wrap thingies… and some bing, bs fries, crispy rice, and kakigori…

That beef fat rice is the stuff of dreams!

Please post about it in Home Cooking when you do, and I will steal your recipe and technique. I have some Snake River Farms grass fed beef fat languishing in the freezer and I can’t think of a better use for it.
I’ve actually done it a couple of times before using the APL recipe on Kimmel’s website. The finishing dressing won’t be needed. Lettuce wraps supplies of butter lettuce, daikon slices, and perilla leaves. Condiments supplies: ssamjang, sesame oil/S&P mix, and various kimchi. For the beef fat rice: chopped smoked short ribs beef fat, cooked rice, fresh horseradish, scallions, sesame-parilla seed blend, and fresh lemon juice. PRD ginger-scallion sauce as a bonus.
That recipe is a good one, but it’s different from the one at Majordomo, the one at Majordomo is based on Chang’s mom’s galbi marinade i believe. They call it APL style because of the smoking technique and the short rib plate (cut ) that APL and Majordomo uses. They also slice it the way APL does on his version.
