Glad you enjoyed your meal there; it looks like you avoided some of the problematic dishes on the menu we reported about. You got some of our favorite / winners as well. :slight_smile: Totally agree with your point about the Kimchi. We had a good Korean friend join us on one of our visits and he felt the same way (awful Kimchi that’s not much better than supermarket versions), and brought down the enjoyment of the Beef Ribs.

Also just a fair warning the “BS fusion” crap you mention is on the menu; you just avoided it. If you want to experience the awful side of this place, order the $110 Hainan Chicken Rice and laugh. Or their failed attempt at Galbi Jjim, but you can pay ~$90 - 100 for the pleasure.

Still a little early in the year.

The first time I had it, the server called the domojang nam prik. The mascarpone dip is ranch for sure.

That dish was awesome when I had it in August. Hainan chicken is just a loose inspiration. The chicken’s steamed rather than poached. The idea of red and green sauces came from Gabriela Cámara. The soup made with the broth was a complex dish in itself.

Yah we’ve had it 3 times now, and it’s always a waste of money; every time our different groups of friends who went with us all agreed, they would not pay that money for that dish.

The first time, the 2nd half of the dish were tasty noodles and soup; 2nd time and 3rd time were mediocre soups (a shadow of the 1st meal), with flat tasting chicken and noodles.

Maybe we lucked out. The dish does vary. The great version we had in August was $88 with morels and black truffles. Tonight it’s $75 with shitakes.

Smoked some short ribs last night inspired by Mr. Chang.

I think it’s inevitable that most restaurants have to close for a few weeks

I was told that Trudy’s the underground barbecue place (before Slab opened), used the same supplier of short ribs that’s used at Majordomo.

If a restaurant that barely has any way to contact it, makes you drive way waaay out of the city, just to pick it up, and drive all the way home before you eat it, can do very well, that shows a potential to revert to that formula and at least be sustained somehow in the interval. I mean… Trudy’s was basically takeout. Would theoretically have done just as well now, if there are people who’d be willing to spend (and leave the house).

I don’t know about anyone else here, but that Majordomo short rib is so difficult to get to eat, due to its price, needing a large group to justify eating it all, not to mention that they sell out early and don’t allow you to pre-order… that I’d be quite interested in doing pickup orders during this time. I think a lot of others might be as interested as me. If they cooked a bunch overnight in bulk, I think they could sell them all, priced per bone. Just a thought of mine.

I did the Bossam this weekend. Great QPR. We ordered one for six people, and added on the tomato cucumber salad (two portions), an extra side of sauces and kimchi (because you can never have enough), and the miso cookies.

This was a fuck ton of food. The bossam was as good as I remember it when I first had it at Ssam in NYC–tons of crispy, delicious skin giving way to juicy pulled pork. So many ways to enjoy this, from wraps to over the rice they provide. Also, given that they give you three different sauces, every wrap can be a little different. Also, their kimchi was really great.

Tomato cucumber salad was very good. Cookies were fine–I like savory desserts but this veered a little too far. All in, $240 for six people. Felt like a steal.
