When we asked the server, it basically led back to this - Rayu - Japanese Chili Oil - Recipe | Spice Trekkers

So imagine the above chili oil with a ton of crispy (crunchy?) garlic.

Mushroom crispy rice with maitake on their IG feed today sounds so good.

Definitely recommend the crispy rice, the texture is perfect with a good hit of mushroom. One of the better dishes last time I was there.

Yeah, it’s hard not to order whatever the crispy rice of the day is unless they’re charging a fortune because truffles.

I was reading maitake and thinking matsutake, which would be a lot more exciting.

the new smoked pork belly and pea crispy rice is delicious too. comes with english peas, snap peas, pea puree, shiitake, pickled ginger and pork broth.

Did that last week. Flavorbomb. But my portion was almost (ALMOST) over-MSG’ed, if that’s possible. It detracted from the freshness of the peas a bit.

same with mine, it was verging on being a bit too salty. would have liked more sweetness from the pea puree. still really good but I’m sure they’ll continue to tweak it more since it’s still new.

That seemed to be the trend, if a dish said it had fish sauce you would definitely taste fish sauce. Mushroom? Yup first hit is of pure fun guys. XO sauce? Immediate umami bomb. Which I respect tho a bit distracting as you say.

First time back for the crew at the domo in a little over a year, so we ran back some favorite and tried a couple new things.

Scallops - cucumber, strawberry, chili

Not ground breaking, but light, refreshing, and I did like the little cuts of strawberry to add some offsetting sweetness to the acid.

Fried Oxtail - salsa seca, peanuts, honey butter

The new-ish (to me) pig head addition to the bing section was the real winner here–it was absolutely delicious and came spiked with little dabs of habanero sauce!

Spicy Fusilli - pork jowl, kimchi, parsley

Some might say the pasta wasn’t quite to that point of al dente (it was pretty firm still) but I didn’t mind because the flavor was phenomenal. The pork jowl was crisped up into little bites that punched this up a bit, but the real reason the dish won me over is the spicy kimchi sauce that was similar to a kimchi fried rice flavor. Majordomo Spicy Fusilli > Jon & Vinny’s Spicy Fusilli.

Pork Belly Crispy Rice - peas, shiitake, sweet soy

Grilled Asparagus - egg yolk, benton’s ham, chervil

Shaved egg yolk adds a nice flourish, but let’s be real it’s grilled asparagus.

Smoked Half Bo Ssam - ssam, condiments, rice

Honestly, it’s a real fight between this and the whole plate short rib when it comes to the main. The short rib definitely has an edge in the rice department, but the bo ssam as a piece of meat holds its own. It’s fun to make little bites with the lettuce and shiso they provide, so even if you miss out on the beef you won’t go wrong with the pork.

Very timely report. I’m going this Saturday and wanted to try some new things. The fried oxtail and spicy fusilli look great. The pig head terrine bing looks intriguing but I will have to fight my son & daughter if we don’t order the Benton’s ham.

Were there any other good new seasonal veggie dishes on the menu?

I believe the potatoes were the only other vegetable on there that I hadn’t had before? But we felt like we needed something green.

And get both the pig head and ham :wink:

I had the sugar snap peas last month, they’re always a hit.

the little gem salad with anchovy, miso and smoked trout roe was solid.

the cherry tomato salad should be coming into season too.
