First time back since before Covid.
Photo of the bing with hozon and sardines disappeared. Sounded weird but worked. Went well with the Roussanne. So now I guess one order is two bing?
Grilled shrimp were great.
Bok choy with crisp chickpeas was a nice foil.
Crispy rice with six kinds of mushrooms was really good. Would have preferred something meaty but wasn’t in the mood for mussels.
I was sharing tastes with my neighbors at the bar so got a slice of the zabuton. Sauce was good but the meat was pretty bland and very chewy, maybe should have been cooked a bit longer. If I’d ordered it I would probably have sent it back.
Also got to taste the crispy potatoes, which were excellent.
This Ruster was delicious, as was the pavlova, which I guess I neglected to take a photo of. I want to go back with a group and get the Major Donut, which is actually a bunch of flambéed beignets and ice cream.
At least that night the menu was less exciting than it used to be. I was disappointed there was no salsa seca dish. Glad I got to try the kakigori before they accepted economic reality and discontinued it.
I definitely agree - pre covid the food was more exciting. RIP kakigori
The bartender told me that the kakigori machine required a dedicated person. Also if ten orders came in, it would take ages to get them all out, so the tables would get tied up.
If anybody happens to be at the Domo tonight, I can confirm that D Chang is definitely not in the kitchen. Because, he’s a a few boxes away from me watching Vampire Weekend at the Hollywood Bowl with his pals Mark Ruffalo and Adam Scott.

the new beef rendang, shrimp sambal with coconut, pandan broth crispy rice is great. a play on a nasi uduk, this was aromatic, savory, spicy, coconutty with great texture from the crispy rice. a top two crispy rice for me.
pork chop with fish sauce and the andy’s orchard peaches and cream were the other highlights.

Yeah wow. Not seeing much Korean influence in these dishes and they look delicious.
Perfect little oysters, just the type I like.
Melon salad with spicy cucumber and shaved ice. So good. Weisers.
Lady Edison ham. Exquisite. On the same level as the best Italian or Spanish.
Wagyu skirt steak. Really good. Photo of the crispy potatoes disappeared. Ditto the little comped portion of tomato and plum salad.
Too full for dessert. The Major Donut tableside service looked like a lot of fun.
Great meal, great service. I might go back tomorrow to try more stuff.
great dinner at majordomo with dear friends. all the new dishes from chef tim have been great: beef shank crispy rice, tuna carpaccio, melon salad, pork chop, sizzling skirt steak. and the classics like the bing with ham, butter and honey; mushroom crispy rice; crispy potatoes; corn ribs; wagyu ragu; pandan pie; and short ribs are still hitting hard.

The short ribs – which I have had three other times in the past and am usually a little disappointed by - were much more flavorful moister than the usual. It was all great.
That Bing board looks epic. How were the pork chop and skirt steak? Looks like we need to revisit soon.
there’s only one menu.
besides the chicken, bo ssam, short ribs and prime rib the menu is pretty doable for one.

Boy as someone who eats solo often I feel you. I’ll often get 2 or 3 dishes when i really want 5! Sometimes places will do half portions where possible but you just have to ask it’s almost never listed on the menu.
Props to Citrin for being single diner friendly. You can order tasting menu size plates for 20/30ish and try a lot

Thanks for the invite and posting/pictures! I’m with Bob in that this has been the best meal I’ve had at Majordomo. Plus got to see a much more complete view of the entire menu since I’ve only ever done Majordomo in smaller groups.
My highlights were:
- Tuna avocado - awesome sauce
- Hiramasa plum - really enjoyed all the elements: refreshing shiso, tangy plum sweetness, good flavor/umami in the fish
- Melon salad - not a looker but really good! there’s a bit of a kick that I really enjoyed
- Bing (all the spreads pretty much)
- Cauliflower - the pineapple vinaigrette was great and really helped this stand above the crowd
- Mushroom crispy rice - last time I had this it was a bit too salty; this time toned down a bit and one of my favorites of the night
- Pork chop - I don’t get pork chop often at restaurants because I had a time where it was dry; this was not! quite moist and juicy and the acidity in the sauce was great to cut through the fat and oil in other dishes
- Pandan Pie - best dessert by far! Just a really great texture to go with the sweetness
Can confirm short rib was moist and flavorful! Quite good and plenty of leftovers. Preferred enjoying it as a wrap with the unpictured sides (wraps, pickled vegetables, sesame sauce, etc) as it was quite a rich dish for me (or maybe I just prefer lighter fare these days).
Great times and great company! And a very reasonable amount of food.
