I hope so. I’ve got a 50:50 mix of Kirby and lemon cucumbers fermenting on my countertop.
I’ll follow up in a week or two to let you know if the lemon cucumbers can handle the kosher dill treatment.
I’ve always found lemon cucumbers too watery for my taste. I don’t find it a useful ingredient.
I’m not that big of a fan either. Though the pickling does sound interesting.
