white cut chicken
damn this was delicious. I’ll have to do some more tasting research but first impressions, I liked this better than the mary’s chicken(?) used in the hainan chicken. it was way more flavorful and the skin was tighter than my waistline after the holidays.

's thin flabby skin, lack of bite(too soft) and underwhelming flavor have nothing on these birds in terms of thicker, snappier skin, flavor and overall meat texture. That’s why I’m still holding out hope that PRD will switch out their Mary’s Chicken for their Hainan Chicken dish. ![]()
Got the White Cut Chicken and I also preferred it over the Hainan chix. More flavor, more toothsome texture, delicious snappy skin.
Also got the scissor cut curry. This was so comforting and delicious. Really great spices and depth from the curry. Excellent stewed shiitakes.
not that I know of. the one I posted about wasn’t the hainan chicken it was the white cut chicken using indian brown chickens.
Got it! That was my confusion didn’t realize he uses different breeds for different dishes. Very cool
We actually never used Mary’s. Originally it was Jidori but we switched back to using Wing Lee chickens which was what Sidechick used in its first year for both the white pullets and brown indian chickens so right now all of our chickens are from the same source.
