Is it worth it to go all the way from Napoli to caiazzo? Yes but only if you are pizza lover and have a Napoli based friend who will drive to there and eat with you. Is the best pizza ever in your life? It’s very personal style of Franco so I don’t know.

Fry pizzas, cones were masterfully fried, never greasy, dough itself has quite structure and not thin but it’s very light on stomach. Texturally other top pizzerias in Italy are lighter but this was light on stomach. Beautifully timed although place is huge. I got tour to end of the room which is really cool. Franco has amazing hospitality mind and so does his staffs.

Highlight was scarpetta which has an amazing tomato flavor that is fresh and cherry tomato flavor (California style Margherita from sei’s omakasei menu is similar but add deep pleasant sundried cherry tomato flavor) with very rich grana padano flavored cream with shaved grains paramo and basil crumble with sponge like his dough was the masterful piece. Other pizzas flavors were quite delicate but he always make pizza a juicy or creamy which is very important for Neapolitan pizza.

All fried corns and pizzas were very delicious

Sounds awesome! Thank you. This is like bucket list stuff here along with Asador Etxebarri. I don’t say that lightly. I am in palliative care, so if I’m going I better do it soon.

I like how he uses ingredient mostly from caiazzo and not using expensive ingredients. By doing that supporting local farmers and people. Pay back. He get lot of respect from that area because to bring business and support from him. Truly nice person and amazing hospitality person like Chris bianco (I just love how he interact with the guests)
