I think double bake dough is more preferred to you since it dosen’t have gummy feeling on dough. And toppings are usually shine rather than need to balance with char and less cooked flour taste of Neapolitan dough

What is the double bake process? One low temperature cook and then one open fire?

Fried and rebaked in 320c total cooking time is round 7minute ish

that double fry/bake dough was awesome, super airy and light but had a great chew to it. Almost like the perfect YoTiao

Does anyone know if the bar seats are open to walk ups? Also what are the current pizza specials?

In my experiences, no seats are for walk ups, they use the entirety for reservations. Re. The specials, I have always seen the special marg and the lamb on there.

Ah lucky ones! I’m usually hitting peak weekend hours and have even had my 4pax reservation seated at the bar so I seldom see an extra seat

Thanks everyone for all the recommendations! Will report back with more pizza pics to add to the collection. Bf has a limited tolerance for spice so we may not do the mala lamb (although it is my birthday …) Has anyone had the newish special Ruti’s pizza?

Yep. The one with hot honey? Definitely has a kick. Good but not my fav pie. Btw, you can get Calabrian chili with any pizza if you want to spice up.

Ask servers no mala chili on one side or chili on side. You can totally ask no problem
