That’s pretty baller. He could have easily just approved his menu items, brought a Chef will him to do all the work then just smile and shake hands. Pretty special to have him there cooking.

mine was the Salmon dish from William Bradley - perfectly cooked - almost rare in a nice dashi broth and winter root veggies.

My wife (and I think a lot of people) was the Spiny lobster by Keller. I don’t think I’ve ever been served such a large piece of lobster at any western restaurant. It was probably half a spiny lobster tail perfectly cooked (some might think not cooked enough) on a bed of mashed potatoes and more potatoes in the sauce. I thought the sauce was a bit salty, but everything else in it was really good.

Also my runner up - the tomato butter with the brioce was prob the best mixed butter I’ve had.

Mine was Chef Keller’s sweet butter-poached Santa Barbara spiny lobster with new crop potatoes. Crazy tender ise ebi tail, and perfectly cooked potatoes. I feel that this dish represents the very definition of high execution California gastronomy, and (still) sets the bar at as high a culinary level as any other cuisine.

Delicious. I think I like this more than the passion fruit. The cream inside is so rich in vanilla

My wife said she prefers the tartness of the passion fruit
