SEU pizza Illuminati in Rome

One of most creative combination I ever encountered but also works in terms of flavor.

Dough is just ideal crispy on the crust, soft and dissolving in the center but holds up the topping very good no gummy feeling at all. It’s definitely not dissolve or dry in your mouth and it’s just perfect.

Dessert course was the best dessert course I ever got from pizza restaurant, sugared pizza dough was mind blowing with combination of peanut, popcorn, and chocolate. Pine colada was on amazing “bruleed” brioche pizza dough.

Also It was first time I got served pineapple on the pizza from Italian. It was with goat blue cheese and 5 different cheese. Mind blowing.

This is what I want to serve for pizza tasting menu in terms of service, presentation and flavor combination.
