I’ve been looking for these myself! I haven’t been, but Nem by Summer Rolls in SGV looks promising, it’s on my list. I’ve read good things about the naem at Budonoki and the picture looks like it comes with some nem chua.

that’s different style of nem at summer rolls, grilled pork instead of fermented. best bet are the the deli places and banh mi places

Yup try the banh mi places usually by the counter or Vietnamese bakery.

I believe they slang the nem chua behind the counter. OP may want to call and confirm unless op is looking for the logs.
I’ve only seen it at banh mi places.
