Stubborn Seed is worthy of its own thread. Truly. Even though it’s way the hell on the northern end of the Strip, Stubborn Seed from Chef Jeremy Ford can justify a trip to Resorts World. Thanks, @moonboy403, for the rec.

Entry level tasting menu starts at $160 and increases to $195 for an extra course of 3 pretty delicious canapés. Want the extras like caviar and Iberico? Add them on. The only thing they didn’t have the night I went was truffle. The wine pairing was an additional $60. Straight up, this is probably one of the best deals in Vegas since you get a lot of bang for your buck.
I had booked my reservation, and then received a note from the GM that my night had been bought out. I just changed my reservation to a different day, and they were so kind to welcome me with the house oysters and a glass of champagne. These oyster were delicious and came with a dropper of habanero infusion. Delicious!
Kalamata Olive Ciabatta | whipped feta, Kalamata dust, pickled baby vegetables + Iberico add-on
Elevated Experience add-on | Kaluga Caviar Macaron, Hudson Valley Foie Gras Tart, Yellowtail Kueh Pie Tee…the yellowtail was the clear winner…so much flavor that was complex and refreshing in one bite…definitely one of my favorites of the night
Japanese Kanpachi Carpaccio | dashi marinated garlic, yuzu avocado mousse, piment d’espelette, calamansi ponzu, honey ginger crisp
Jidori Oyster & Gnocchi | roasted garlic herb velouté, mushroom à la greque, fava beans, artichokes, hazelnuts…I really enjoyed this dish!
I forgot what this was, but it was a surprise from the kitchen. It was a single fun bite.
Madai Veronique | muscat grapes, desert moon mushrooms, haricot verts, bottarga crumble, miso buerre, tarragon essence…there was a lot going on, but this dish hit.
Australian Wagyu Strip Loin | new potato, pearl onion, cauliflower soubise, black bean sofrito, delicate jus
Strawberry Meringue | poppy seed cake, calamansi curd, strawberry mint sorbeto

I had a lot of fun at this solo dinner. The team here is firing on all cylinders. The food was thoughtful and whimsical. Granted there was repetitive usage of yuzu and calamansi, but I’m keeping in mind that the price of entry is $160, which I think is a steal.
I’m particularly interested is making a return trip the next time I’m in town. Service is attentive, but not overtly formal. I really enjoyed this meal and the folks who work here. Probably my favorite meal of my entire trip in the spring.
