I got one last year and this year. It comes out to around $8-$9/lb and the inter muscular fat is really great. Such a great deal for prime NY.

Still my source for mascarpone, burrata, and fresh mozzarella. Business has slowed considerably since most of their customers are restaurants.
Don’t pass up on their low moisture cheese… that Caciocavallo is AMAZING in lasagne… The smoked mozz is great on pizza with artichokes…
Good to know! 3 lbs of cheese is a lot…even for me. Maybe when I get my pizza oven.
It freezes really well.
