My experience has been mixed. Usually the well done fries are crispier with maybe a few ‘potato sticks’. Sometimes, though, I wish I hadn’t bothered to try to outsmart InO.
New range w/ air frying feature is supposed to be delivered tomorrow, so… maybe???
That’s what I hope for when I order extra extra well done. But even saying that to the order taker, they often aren’t the sticks I’m looking for.
You absolutely can fry at the same temperature. Maybe not as pretty looking as the immediate fry at different temps. But it can be done.The key is you have to let them sit after the first fry.the residual heat cooks them without additional browning.
I did some work at a restaurant that had only one fryer. And we used to do that very nicely.
Good luck getting In-N-Out to do that.
Go Go Bird has great fries. Normal, Fuirkake or Japanese Poutine.
They are definitely not from frozen bag.
Next door at The WEHO Sausage Company there are also great French fries but I don’t have the picture.

I get that frozen fries can make a great product. But we’ve all had that product, over and over and over again. I want to eat something with more character. If the quality is inconsistent, so be it. Down with frozen fries. Eszett fries have character.

Based on my experience I don’t think I’d ask for double extra. One is iffy enough.
I wonder how Fatburger makes their fries?
I don’t get them often, but remember liking both their skinny and thick fries. I’m pretty sure they brag about not having freezers, so are they fresh cut? I dunno. Just wondering.

I don’t know, but in my experience, the quality of Fatburger fries (like so many others) varies greatly, depending upon how long they’ve been sitting under the heat lamp after frying.
And that’s what makes well-done InO fries at least decent – they’re always in my hands shortly after coming out of the fryer. Just IMO, of course.
Never forget my first time at a Fatburger it was a drive-thru. I was starving. I hadn’t eaten in like a full day. so I got like a half-pound burger and like two large orders of fries and I’m driving around and eating the burger and then I stick my mitts into the bag to get a couple fries and like… WTF!!! Not salted. Are you FN kidding me?
I called up later.
Manager: “Yeah, we don’t salt the fries. Some people don’t like them salted”
Me: “well, I don’t want to know any of them. But I think you have this in reverse. The majority of people like their fries salted, so the few that don’t should ask for them not salted rather than have the vast majority ask for them to have salt.”
I think Ive been to Fatburger twice since then. Maybe.

Recently ate my favorite fries in a long time at Heavy Handed in Santa Monica. They’re a former pop up hamburger joint that just opened a brick and mortar. The burger was pretty great too.

The best way I can describe these fries is that they taste like Majordomo fries except in shoestring form. Strong beef tallow fragrance, crispy crust with a touch of chew, and a moist, soft, non starchy interior.
Agree 100%. I was ready to love the burger (and did), but was really impressed with the fries. I feel like a lot of times these places treat fries like an afterthought.
No pics, but was shocked by how good the steak fries are at Cloverfield. Unlike most steak fries that are basically limp potatoes, this one was fried to proper crunch on the outside with fluffy inside.
This brings the list of actually good dishes at the restaurant to 2 (the other is the hummus)
