I have chicken and vermouth, mushrooms, and mozzarella cheese. Most recipes want me to use a heavy cream with the mixture. Could I substitute chicken broth?

Maybe do a velute instead? Otherwise you might miss that thick texture

I went and got the heavy cream. It was AMAZEBALLS! I was licking the plate. Julia Child recipe.

I made Suzanne Goin’s version of Julia Child’s old timey Rice Soubise (have some green garlic I pickled in the spring) -blew me out of the water, so good.
