Are we talking scrambled only or any kind of eggs? Lately we’ve been eating a lot of fruit, yogurt & granola for breakfast. But! I threw this down yesterday. It’s a Sunny Side-up Egg, Beefsteak Tomato, Vegenaise on Ezekiel Toast, topped with Cilantro Salsa Verde, Flaky Salt & Aleppo Pepper.

Recently, leftover chimichurri sauce with overeasy eggs.
Growing up, nuoc cham (prepared fish sauce) over hard boiled eggs and rice.

Partly. It’s the fish sauce prepared with bottled fish sauce, lime juice, sugar, chilis, and other things (it’s like adobo—everyone has their own recipe).

Curried ketchup is good on eggs.
Asian sweet chili sauce is great on them too.
For scrambled I like to sprinkle in dill weed and some dried onion powder for that nice toasted-onion flavor. When I’m making them for myself I sometimes add a pinch of chipotle powder.
